Ingredients: Makes approx 8 burgers.

225g Red Lentils
2x Vegetable Stock Cubes
85g Butter
2x Onions Chopped
4x Celery Sticks Chopped
575g Chopped Mixed Nuts
575g Fresh Breadcrumbs
4x Large Carrots coarsely grated
6x tbs Chopped Parsley
4x tbs Chopped Thyme
8x Eggs Beaten
Salt & Pepper

Method:
1.Put the lentils in a saucepan and cover with sufficient water, add the stock cubes and bring to boil, simmer for 15 mins until lentils are tender and the water is absorbed, leave to cool.

2.Melt the butter and add the chopped onion and celery cook for 5 mins until soft, add the nuts and breadcrumbs.

3. Stir in the grated carrot, chopped parsley and thyme, lentils, eggs, salt and pepper. Cook for 5 minutes stirring continuously to stop it sticking to the pan.

4.Mix well & turn out onto smooth the surface and make into burger patties and cook in a frying pan or on the BBQ for approx. 20-30 mins until just beginning to brown.

This can also be used as a veggie loaf just turn the mixture into a lined 800g loaf tin and bake at 180C for about 25 minutes or until the top is golden, leave to cool slightly then slice as you wish.
