Triple Chocolate Brownie Cookies

These are fab and dont get put off by the fact that they are GF. Really important to use good quality cocoa powder for these it does make all the difference.

Ingredients:

2 large or 3 regular sized baking sheets (lines)

95g of really good quality cocoa powder

385g icing suger

3 medium eggs

130g of chocolate chips ( use a mix if you want to be different)

1 tsp sea salt flakes

Method:

Pre-heat your oven to 180C (160C fan)

Line your baking sheets

For this recipe the cookie dough doesn’t like to sit around once it is made and to help ,make sure your are fully prepared before you start. Have all your ingredients ready weighed out, cracked and ready to use.

Put your icing sugar, cocoa powder and seal salt into a large bowl and mix.

Now add your eggs and mix well (on low if your using a mixer) the mixture will seem really think dont worry that how it should be.

Scrape down the sides of the bowland make sure everything is mixed in.

Add your chocolate drops and mix until they are evenly spread through the cookie dough.

Using a cookie scoop (ice cream scoop) or large spoon. Dollop 12 golf ball sized blobs onto your baking sheet. Make sure you have plenty of room between each one as they will spread. You may only get 4 or 5 on each sheet.

Bake for 17 minutes but check after 15. The cookies will look soft but not when when they are ready. If they don’t look ready give them another 2 minutes.

Leave to cool completely before lifting off the trays. I you try to lift them too early then you may find they are stuck or even break, a little help with a pallet knife can help the situation.
