3 Avocados ( ripe but not bruised)
1 Large ripe tomato
Juice of 1 lime
Handful of coriander, leaves and stalks chopped (reserve a few leaves for garnish later)
1 Finely chopped small red onion
1 chilli red or green de-seeded and finely chopped


1. Use a large knife to pulverise the large ripe tomato to a pulp the slip into a large bowl.
2. Halve and stone the avocado’s
3. tip the juice of the lime and a handful of chopped coriander, 1 finely chopped onion, 1 de-seeded chilli into the bowl and season with rock salt and freshly ground black pepper.
4. Use a whisk to roughly mash everything together, serves straight away, if not serving straight away sit one of the avocado stones in the mix this helps stops it going brown, alternatively, cover with cling film but make sure you push the film to the top of the guacamole to prevent as much air as possible getting to your fresh guacamole.n
